Momma got an Instant Pot/Pressure Cooker… and so should you!

Yes, I am one of the million that got an Instant Pot/Pressure Cooker for Christmas.  In all honesty, its the ONLY thing I asked for.  Not only did I ask for it, I researched and sent my hubby the direct link to the one I wanted. Yes, I know you are thinking that’s one lucky man.  😀
I didn’t get the Instant Pot brand.  There are tons of brands to choose from and after much researching I went with this one.  It includes several accessories and a cookbook so I thought it was a better value.  However, the price has gone up so you may can find a better deal on another brand.
Let me just say it’s all worth the hype.  I have been so pleased with this little invention!  All the buttons and functions can be intimidating at first, but trust me, give it a try.  You will be so surprised, by how easy and fast it is.
The first meal I made was a Rotisserie style chicken and healthy rice.  I looked at several recipe’s and the one I found that I liked best has to use the saute’ function to brown both sides of the chicken (season heavily), add 1 cup chicken broth, then cook for 26 minutes (though you have to cook by weight) and I let it cool without releasing the steam for about 10 minutes.
It turned out amazing!  We ate this for dinner and had enough leftover of both, for me to freeze 3 cups to use later.  I actually bought another chicken today to make and freeze.  Its awesome to have cooked chicken that all I have to do is take out and mix together for a quick and easy meal.
I also made sausage and peppers.  My kids wont eat the peppers so instead of cooking them all together like some recipes I found, I did it separately.  I cooked the sausage then while the cooker was still warm sautéed the onions and peppers.  Everything was done and only had one pot to clean up in like 15 minutes time.  Well other than the macaroni and cheese I also made to go with dinner.
I haven’t used the crock-pot feature yet, but will be making a soup in it tomorrow.  Tonight I’m planning to cook BBQ split chicken breast and green beans.  This ONE appliance has saved me so much TIME and cleanup cooking.  I can’t tell you how much I LOVE only having to clean up one pot.

    Wow! I have heard lots about these but haven’t used one. They sound so great.

      I really do love it. With 3 kiddos anything to helps make dinner faster and easier to clean up is a win in my book.
